Most beets are bright purple, although white beets are also available beets can be enjoyed and grated or cooked, cooled and added to salads. Beets soups and juices are a great way to enjoy the highly nutritious vegetable. Other health benefits of beets include: cancer prevention, neural-tube defect prevention, liver detoxification and homocysteine lowering.

Beets are a good source of B vitamins, especially folate and are rich in electrolyte minerals magnesium and potassium. Beets have a higher carbohydrate content than most other vegetables which makes them a significant source of energy.

Beets are a good source of the minerals iron and copper, which help prevent anaemia in the blood.

Beets also contain a good dose of vitamin C.
